Florence Fennel (F. vulgare azoricum), also known as finocchio, is an annual, compact plant with a large round heart growing up to 500g or more. Cold tolerant and disease resistant.
This fennel forms a bulbous base, which is harvested and used for its anise flavor and crisp texture. Try it sliced in salads, roasted or sauteed and added to chicken or fish dishes.
Florence fennel is a decidedly cool-season vegetable; heat causes it to grow poorly and become tough.
In cold-winter climates Florence fennel is started in very early spring or planted in late summer for a autumn harvest.
In areas with light frosts its grown in both autumn and spring.
If you reside in a climate with a short, cool growing season, you can harvest the plants as babies only a couple of inches across instead of letting them mature to the usual four or five inches.
